Exceptions in Policy >> Encryption

I was wondering if I can add email addresses to Exceptions in Encryption part of the policy ?

We have Triton APX Email Cloud

All I see in Encryption settings is how to encrypt, but nowhere to add exception to messages that already encrypted.
